Ham and Swiss Breakfast Casserole


We make a few breakfast casseroles but we are most fond of this recipe. Ham and swiss with hollandaise sauce to top it off. This casserole is an easy and very flavorful dish.



Ingredients:

8 Jumbo Eggs
1 Package Shredded Hashbrowns
1 Ham Steak
1 1/2 Cups Shredded Swiss
2 Tablespoons Heavy Cream
1 Package Hollandaise Sauce or Homemade Hollandaise
3 Tablespoons Water



Preheat oven to 350 degrees. Spray a 13 x 9 glass casserole dish with non stick spray.

Add ham steak to large skillet and cook on medium heat. Turning occasionally. Cook until browned. Add 3 tablespoons water to skillet, and deglaze pan with ham. Cook until most of water is absorbed and ham has a nice caramel color to it. This will give the ham a great flavor.

Remove from heat and transfer to plate to cool. Once cooled cut into bite size chunks, set aside.

Add hashbrowns to 13x9 dish and spread evenly. Sprinkle salt and pepper onto hashbrowns. Top with chopped ham and half of swiss cheese.

In a large bowl, add eggs and cream, beat vigorously. Pour beaten eggs evenly over hashbrowns and ham. Top with remaining swiss cheese.

Bake for 25-30 minutes until eggs are set. Remove from oven.

Prepare hollandaise sauce to serve on top of casserole. We like to top it all off with chopped green onions. Delicious and very filling!


Cook ham steak

Finished ham should have a nice caramel color

Add hashbrowns to greased dish

Salt and pepper hashbrowns

Top with cut up ham and half of cheese

Add eggs and cream to large bowl


Beat vigorously


Add beaten eggs

Top with remaining cheese

Finished and ready to eat

The hollandaise adds that extra flavor to this dish
